Herb Crusted Salmon


  • 2 salmon fillets
  • 1/4 cup basil leaves
  • 1 cup parsley
  • 1 tsp lemongrass paste
  • 1/4 lemon juice
  • 2 garlic cloves
  • 1/4 cup extra virgin olive oil
  • 1/2 tbs honey
  • salt and pepper as desired


  1. Pre-heat oven to 180 degrees celcius
  2. combine all ingredients (except the salmon) and blitz with a stick blender or food processor
  3. Place salmon fillets on a lined baking tray
  4. spread herb mix over the top of the fillets and bake in the oven for 15-18 minutes
  5. serve with a lemon wedge, and salad or vegetables as desired
