Ingredients
- 2 salmon fillets
- 1/4 cup basil leaves
- 1 cup parsley
- 1 tsp lemongrass paste
- 1/4 lemon juice
- 2 garlic cloves
- 1/4 cup extra virgin olive oil
- 1/2 tbs honey
- salt and pepper as desired
Method
- Pre-heat oven to 180 degrees celcius
- combine all ingredients (except the salmon) and blitz with a stick blender or food processor
- Place salmon fillets on a lined baking tray
- spread herb mix over the top of the fillets and bake in the oven for 15-18 minutes
- serve with a lemon wedge, and salad or vegetables as desired
