Ingredients
- 3 bananas
- 1 cup mixed fresh or frozen berries
- ¼ cup extra virgin olive oil
- ¼ cup sugar of choice
- 1 cup self-raising flour
- Pinch of salt
Method
- Preheat the oven to 180 degrees Celsius (fan-forced)
- In a large mixing bowl, mash bananas with a potato masher
- Add flour, sugar, oil, salt and mix well. Fold through berries
- Grease a muffin tray with spray olive oil and divide the mixture into the tray
- Bake for 20-25 minutes, until golden brown.
