Ingredients
- 500g lean lamb mince
- 1 egg whisked
- 1/2 cup wholemeal bread crumbs or almond meal
- 3 cloves garlic crushed
- 2tsp ground cumin
- 1tsp ground coriander
- 1/2 spanish onion finely diced
- Greek yoghurt and salad of choice to serve
Method
- Heat a large frying pan with olive oil or alternatively, BBQ
- Combine lamb, onion and spices in a bowl, mix through egg and breadcrumbs and season with salt and pepper.
- Divide the mixture into 8 and roll into fat sausages and skewer
- Cook, in frying pan, turning regularly until cooked through
- Serve with Greek yoghurt and quinoa or cous-cous salad, include vegetables high in vitamin c such as broccoli and cauliflower for enhanced iron absorption
