Ingredients for healthy Anzac biscuit recipe
This easy Anzac biscuit recipe uses nutritious ingredients that you probably already have in your pantry. Rolled oats and desiccated coconut are an excellent source of fibre. Fibre keeps you feeling full for longer, and slows down the absorption of sugars into your blood stream – helping to offset the sugar and syrup in this recipe!
- 1 cup rolled oats
- 1/2 cup desiccated coconut
- 1/4 cup brown sugar
- 2 tbsp honey or maple syrup
- 1/4 cup olive or canola oil
- 1tsp baking soda
- 4tbs water
How to cook Anzac biscuit recipe
Use a cookie tray lined with baking paper to keep your clean-up quick and easy! And remember to leave space around each biscuit on the tray. They will spread out as they cook.
- Preheat the oven to 180 degrees Celsius.
- Combine all dry ingredients in a bowl except baking soda.
- Combine wet ingredients in a separate bowl and stir to combine, heat in microwave for 30 seconds then stir in baking soda.
- Add wet mixture to the dry and mix well.
- Roll mixture into small balls and flatten onto a lined baking tray.
- Bake for 10-15 minutes. Allow to cool for 5-10 minutes on the tray before transferring to a cooling rack to fully cool.
When your biscuits are cooled, you can eat immediately, or store in an airtight container to eat later. Enjoy your healthy Anzac biscuits!
