Recipe: Banana & Berry Muffins (Vegan)


  • 3 bananas
  • 1 cup mixed fresh or frozen berries
  • ¼ cup extra virgin olive oil
  • ¼ cup sugar of choice
  • 1 cup self-raising flour
  • Pinch of salt


  1. Preheat the oven to 180 degrees Celsius (fan-forced)
  2. In a large mixing bowl, mash bananas with a potato masher
  3. Add flour, sugar, oil, salt and mix well. Fold through berries
  4. Grease a muffin tray with spray olive oil and divide the mixture into the tray
  5. Bake for 20-25 minutes, until golden brown.
