Delicious, higher in fibre and protein than regular cookies, but still energy dense so enjoy in moderation!
-400g tin of chickpeas
-1/2 cup natural peanut butter
-1/3 cup brown sugar
-1/4 cup honey
-1/2 cup rolled oats
-1/2 cup dark choc chips
-1/2tsp cinnamon
-1tsp vanilla extract
-1tsp baking powder

Preheat over to 180. Add all ingredients to food processor or blender except choc chips and oats. Mix through oats and choc chips. Roll mixture into balls and flatten slightly with a fork on a liner baking tray. Bake for 15-20 mins.
