Nachos don’t have to be just corn chips covered in mince and cheese. This healthy beef nachos recipe adds beans, corn, sweet potato, spinach, tomatoes and avocado to turn a family favourite into a more substantial meal. You still get the crunchy corn chips and Mexican-inspired flavours, with plenty of colourful ingredients mixed through as well.

An easy way to add more plants

Adding more plants to your meals does not need to mean eating less meat. Beans, corn, sweet potato, spinach, tomato and avocado each add different flavours, textures and nutrients. Beans are also an easy way to stretch beef mince and add extra fibre. That can make one batch go further while adding more variety to the meal.
